Kovapuri

Kovapuri is the ANDHRA name for NORTH INDIAN SWEET dish GUJJIA.

All purpose flour, ricotta (khoya), raisins, almonds, ghee, water, sugar.

Mix all purpose flour in ghee. Add water and knead into soft dough. Cover it with a damp cloth .Fry khoya to a light brown color. Add sugar and mix well. Add almonds and raisins. Roll out the kneaded dough into a chapatti.

Fill half of the chapatti with khoya mixture. Fold the chapatti and seal the round Twist the edge inwards. Deep fry till the KOVAPURIS or GUJJIAS are golden brown in color.
